Lately I've been making zucchini and yellow summer squash with olive oil, red wine vinegar, slivered almonds, parsley, and asiago cheese. Basically I cut the squash in 1/4 inch slices and saute them over medium heat with olive oil and salt until tender but not mushy, then I drizzle in the red wine vinegar, sprinkle with chopped parsley and slivered almonds, and saute for a minute or two more. Then I grate over the cheese. It works well with carrots and cauliflower too.

Mushrooms inspired by Mrs. Maggot in The Lord of the Rings:

Ingredients:

-4 slices thick cut bacon, sliced in 1/4 inch pieces (or 6 slices regular bacon, same prep)
-16 oz mushrooms, quartered
-Salt to taste (about 3/4 tsp)
-Freshly ground black pepper to taste (about 1/2 tsp)
-2 tsp fresh rosemary, chopped
-1Tbsp unsalted butter
-1/2 tsp granulated garlic
-1/2 tsp onion powder
-2 Tbsp heavy cream

Directions:

Heat saute pan or frying pan on high. Add bacon and cook on high until fat is rendered and bacon is crisp. Remove and reserve bacon. Keep the bacon fat in the pan and reduce the heat to medium. Add mushrooms and salt. Saute to coat in fat and cook on medium until mushrooms are softened. Raise heat to high and add half the rosemary. Cook on high until liquid released from mushrooms is evaporated. Reduce heat to medium and add butter, onion powder, and granulated garlic. After butter is melted, add remainder of rosemary and the bacon and saute to coat mushrooms. Add cream and very slightly reduce until desired consistency is reached.

Serves 1-2

Macros for 1/2 recipe: 345 calories, 21.4g fat, 24.8g protein, 10.9g NET carbs (and also 5.2g fiber)
